Recipe Idea - Chicken drumsticks with Lemon, Olives and Green Beans
Ingredients
- Chicken Drumsticks
- Rum and Que Tuscan Rub
- 1-2 Lemons cut into quarters
- Bag of Green Beans (250g)
- Red Onion cut into quarters
- Pitted Olives
- 1/4c Balsamic Vinaigrette
- Olive Oil
Optional Extra’s
- Garlic
- Cherry Tomatoes
Method
Rub the chicken drumsticks with a nice layer of Rum and Que Tuscan Rub and put aside for 5-10 minutes.
Add a healthy dash of olive oil to an oven tray and place the rubbed drumsticks in.
Squeeze the lemons over the entire dish of drumsticks and place them in the tray once squeezed. Pour 1/4c Balsamic Vinaigrette over the dish.
- optional extra – Add cloves of garlic (unpeeled) to the dish.
Cook in the oven at approx. 200˚ c/390˚ f for approx. 20-30minutes.
After 20-30minutes add the Green Beans, Olives, Red Onion and continue cooking until the drumsticks hit an internal temperature of approx. 90˚ c - 97˚ c / 195˚ f-205˚ f.
