Tortilla Roll Ups

These are super simple to make and so tasy!!!

 

What you'll need:

1 x packet of large tortillas

Large skewers, we used stainless steel skewers (Bamboo will be fine, just be careful of weight)

1kg of lamb or beef mince (lamb is better for this, but it really depends on your tastes)

1 x Brown onion grated of diced finely

3 x Large garlic cloves minced 

3 x Tablespoons of Ram Rod

1 x Small bunch of flat leaf parsley with stems, chopped finely.

1-2 x Birdseye chili's (optional)

Feel free to add cheese to these too!

Meat Juice or OG sauce for serving.

 

Instructions:

1) In a bowl, combine lamb mince, onion, garlic, Ram rod and chili's (if using). Leave for at least an hour or overnight is best.

2) Cut the torillas into the largest possible squares you can from 1 sheet.

3) Spread the mince on each torilla in an even thin layer, leaving about 2cm clear on the edge you are going to start rolling. Then roll each tortilla until it's a full circle.

4) Once all torillas are rolled up, line them up in a row and drive the skewer through them. Generally 3 or 4 rolls per skewer will fit.

5) Fire up the grill, making sure the charcoal fire is not too close to the grill. Place the skewers on the grill and close the lid to keep temperatures stable.

6) Keep turning the skewers until cooked evenly, then open the lid to create some flames to finish the skewers off by caramlising both sides.

7) Brush on sauce of your choice and then serve
