Cauliflower steak
Need a good side dish to sink your teeth into?
This cauliflower on butter bean purée, topped with a fresh chimichurri was bang on!
Super simple to make and for a cauliflower hater, we’d eat this weekly!
Ingredients:
1 x cauliflower
1 x tablespoon of seasoning for the cauliflower- we used Rib Rocker
Ingredients for the purée:
1 x can (400g) butter beans
1 x tablespoon of garlic
1 x juice of a lemon
Seasoning for the purée - we used 1 teaspoon of Intensify
Method:
1) Cut a thick steak of cauliflower from the middle of the cauliflower.
2) Season both sides of the steak with the seasoning, we used Rib Rocker.
3) Heat a pan on medium heat with some olive oil and butter then when the pan is ready, place the cauliflower into the pan.
While that’s cooking... Make your chimichuri.
Butter Bean puree:
Place all of the ingredients into a food processor or blender and pulse till smooth.
Pour the butter bean purée onto a plate.
When the cauliflower is browned nicely turn over and cook the other side till golden brown.
Place the cooked cauliflower steak on top of the purée and drizzle the chimichurri over the top and serve!
